Creamy mustard Coleslaw

Serves: 6-12
  • 3 baby cabbages, 2 green and 1 purple/ or ½ head large green
  • ½ red onion, thinly sliced
  • 2 large carrots, grated
  • 4 Tablespoons mayonnaise of your choice
  • 1 Tablespoon apple cider vinegar
  • 2 Tablespoons dijon mustard/wholegrain
  • 2 Tablespoons sugar
  • salt and ground black pepper
  1. Slice cabbages as fine as possible.
  2. Slice red onion as fine as possible.
  3. Grate the carrots
  4. In a bowl, mix together mayonnaise, mustard , sugar, vinegar and salt and pepper.
  5. Pour over vegetables and cover until used.
  6. This can stay in an airtight container for a few days in the fridge.
